This collection of old and new creations by Paul Jackson - with a little help from family, includes delightfully simple designs of all kinds of animals. Jackson is good at capturing the most basic essence of his subject matter, achieving a recognizable animal with a minimal number of folds.
With detailed, hand-drawn diagrams and a good introductory section, the book is quite approachable to beginners - as well as a lot of fun for more advanced folders. There's some really good teaching material here, as well. The book even provides 60 good-quality sheets of origami-paper for practice.
